Potatiskorv (Kartoffelwurst), in Schweden auch als Värmlandskorv und unter schwedischstämmigen Einwohnern der USA auch als Potatis Korv bekannt, ist eine Brühwurst aus rohen Kartoffeln, Schweinefleisch und Rindfleisch, die aus der Region Värmland im Westen von Schweden stammt. Im Rest von Schweden wird die Wurst meistens Värmlandskorv (Värmländer Wurst) genannt. Potatiskorv wird meistens traditionell zu Weihnachten gegessen.
