Die Französische Rotwurst ist eine Blutwurst-Variante, die sehr eng mit der Thüringer Rotwurst verwandt ist und auch identisch wie diese hergestellt wird. Im Unterschied zur Thüringer Rotwurst werden jedoch bei der Französischen Rotwurst keine Schweinebacken, sondern nur Schweineschultern verwendet. Die Masse für die Französische Rotwurst wird dann in Därme mit einem Durchmesser über 65 mm abgefüllt.
